Yum!

I was so proud of the dinner I cooked today that I took pictures. I am not organized enough yet to post said pictures, but I hope to do so.

I tried cooking pork chops for the first time, so I dusted them with salt & pepper then pan seared them using PAM to try to cut down on calories. Once they were pretty well cooked, I added apple cider vinegar and sliced apples. It was so good! I also steamed some broccoli for something healthy. For me and Mom, I thin sliced sweet potatoes and seasoned them with ground cinnamon, ground nutmeg, ground ginger, and ground red pepper before roasting them in the oven. For Dad I thin sliced regular potatoes and roasted them with garlic and parsley and olive oil. I also caramelized onions (for Monkeys & Dad). But my favorite thing was the spinach salad - I added tons of stuff I don't normally, like strawberries, boiled eggs, avocado, cucumbers, cherry tomatoes, dried cranberries, and red peppers. Mmmmmmmmmmmmmmm!!! And for a low point dessert I did sugarfree instant pudding with more strawberries. I added chocolate chips to my Dad's and Monkey's pudding.

I also used my good dishes. :D :D :D

Then Mom and Dad and I watched a few episodes of Midsommer Murders.
A great day.

I managed to cut my finger on one of the porkchops... LOL!! But otherwise YES! :)
